Creamy Garlic Parmesan Chicken

Ingredients for the Chicken

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 tablespoon butter

2 cloves garlic, minced

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1 teaspoon dried thyme

1 tablespoon fresh parsley (optional for garnish)

For the Roasted Vegetables:

1 cup baby carrots

1 cup broccoli florets

1 tablespoon olive oil

Salt and pepper

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare the vegetables: Place the baby carrots and broccoli on the baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss everything together to coat evenly, then roast for 20-25 minutes, or until the veggies are tender and lightly browned.

  3. Cook the chicken: While the vegetables are roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and garlic powder.

  4. Place the chicken breasts in the skillet and cook for 5-7 minutes per side, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove the chicken from the skillet and set aside.

Pour in the heavy cream and bring it to a simmer. Stir in the Parmesan cheese and thyme, and cook for another 2-3 minutes, until the sauce thickens.

  6. Serve: Slice the chicken and drizzle the creamy garlic sauce over the top. Serve with the roasted vegetables and garnish with fresh parsley if desired.
