Creamy Garlic Parmesan Chicken

Valentine’s Day is just around the corner, and as a new mom with a newborn, finding time for a special meal can feel impossible. But guess what? You can have a beautiful, tasty meal in under 45 minutes, even with a baby in your arms. I’m here to share an easy and delicious recipe that’s perfect for Valentine’s Day—and it’s one you can prep and cook quickly, even if you’re juggling diaper changes and feedings.
I know that after bringing a little one into the world, you might not feel like cooking anything extravagant. You’re exhausted, your schedule is unpredictable, and all you want is a simple, comforting meal that doesn’t require hours of prep time. So, let me introduce you to my go-to Valentine’s Day dinner: Creamy Garlic Parmesan Chicken with Roasted Vegetables.
Not only is it incredibly easy to make, but it’s also perfect for those moments when you want to treat yourself (and maybe your partner) without the stress. Plus, it’s a great meal to share with your little one—just mash up the vegetables for a baby-friendly twist if you’re introducing solids.
Ingredients for the Chicken
2 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and pepper to taste
1 teaspoon garlic powder
1 tablespoon butter
2 cloves garlic, minced
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 teaspoon dried thyme
1 tablespoon fresh parsley (optional for garnish)
For the Roasted Vegetables:
1 cup baby carrots
1 cup broccoli florets
1 tablespoon olive oil
Salt and pepper
Instructions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the vegetables: Place the baby carrots and broccoli on the baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss everything together to coat evenly, then roast for 20-25 minutes, or until the veggies are tender and lightly browned.
Cook the chicken: While the vegetables are roasting, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and garlic powder.
Place the chicken breasts in the skillet and cook for 5-7 minutes per side, until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove the chicken from the skillet and set aside.
Make the creamy garlic sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, until fragrant. Pour in the heavy cream and bring it to a simmer. Stir in the Parmesan cheese and thyme, and cook for another 2-3 minutes, until the sauce thickens.
Serve: Slice the chicken and drizzle the creamy garlic sauce over the top. Serve with the roasted vegetables and garnish with fresh parsley if desired.
And voilà! You’ve got a meal that’s rich, comforting, and super satisfying. In under 45 minutes, you’ve made a Valentine’s Day dinner that feels special without the stress.
